Easy Spinach Lasagna is made with delicious and thick layers of marinara sauce, ricotta, spinach, no-boil noodles, and mozzarella.

So it’s about 95 degrees out, but this mama needed lasagna, and it was totally worth turning on the oven for. Back in college, I was a deli manager at Mothers Market and Kitchen, that’s where I fell in love with spinach lasagna. The cooks would make huge trays for us to put out in the hot section and at the end of the night whatever was not eaten we got to take home to eat! I’m pretty sure rules have changed since then, haha!

Spinach lasagna may be the perfect meal in my opinion, and it’s perfect for a meatless meal option. I have one child who loves meat and one that won’t eat meat most of the time. This meal pleases all parties at my house! This dish also makes an excellent freezer meal, or meal to bring to a new mama!

The ricotta spinach filling is to die for, I could eat this with a spoon!

Easy Spinach Lasagna

Easy Spinach Lasagna is made with delicious and thick layers of marinara sauce, ricotta, spinach, no-boil noodles, and mozzarella.

Ingredients

  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp basil, diced
  • 16 ounces frozen spinach, thawed and water squeezed out
  • 2 lbs. ricotta cheese
  • 1 tsp salt
  • 1 egg
  • 1 tsp dried oregano
  • 1 25 ounce jar marinara sauce or spaghetti
  • 2 cups shredded mozzarella cheese
  • 12 no-boil lasagna noodles
  • 1/2 cup water

Instructions

  1. Melt butter in a large skillet over medium heat. Add the garlic and basil, saute for 2 minutes and remove from the heat.
  2. In a large bowl combine ricotta, sauteed butter, garlic, and basil, egg, salt, oregano, and spinach, stir to combine.
  3. Preheat the oven to 375 degrees F.
  4. Start lasagna by spreading a little bit of tomato sauce to the bottom of a 9x13 baking dish. Layer with 3 lasagna noodles, 1/3 of the ricotta mixture, 1/4 of the tomato sauce, and 1/4 of the mozzarella cheese. Repeat 2 times more and pour a half cup of water over the whole thing. Cover lasagna with oiled foil.
  5. Bake for 40 minutes, or until bubbling and noodles are soft. Remove foil and let bake for 10 more minutes.
  6. Let lasagna cool for at least 10 minutes before serving, enjoy!

    Can I substitute zucchini noodles for the lasagna noodles and if so would I then omit the 1/2 c of water?

      Yes absolutely! We substituted with butternut squash before too! Depending on thickness of zucchini noodle slices time may need to be adjusted!

      Hey!! Great question! I will update post with this info!! Here you go❤️

      To freeze and reheat a quiche, follow these steps:

      Freezing:
      1. Allow the quiche to cool completely after baking.
      2. Wrap the quiche tightly in plastic wrap, making sure to cover it well to prevent freezer burn.
      3. Place the wrapped quiche in a freezer-safe resealable bag or an airtight container.
      4. Label the container with the date and contents for easy identification.
      5. Place the quiche in the freezer, where it can be stored for up to 2-3 months.

      Reheating:
      1. Preheat your oven to 350°F (175°C).
      2. Remove the quiche from the freezer and take off the plastic wrap.
      3. Place the frozen quiche on a baking sheet or in a baking dish.
      4. Bake in the preheated oven for about 30-40 minutes, or until the center is heated thoroughly.
      5. To check if it’s done, insert a knife into the center of the quiche and see if it comes out hot.
      6. Once heated, let the quiche cool for a few minutes before slicing and serving.

      Note: It’s always a good idea to keep an eye on it while reheating to ensure it doesn’t overcook.

      I’m so Sorry again, here is the correct steps to follow!❤️❤️
      To freeze and reheat lasagna:

      Freezing Lasagna:
      1. Allow the lasagna to cool completely before freezing. It’s important to cool it down to room temperature.
      2. Cut the lasagna into portion sizes that you will be able to easily reheat later. If you don’t plan on reheating the entire dish.
      3. Place each portion into a freezer-safe container or wrap it tightly with plastic wrap and then with aluminum foil. Make sure to seal it well to prevent any freezer burn.
      4. Alternatively you can wrap and freeze entire lasagna.
      5. Place the containers in the freezer, ensuring they do not touch each other, and allow them to freeze for several hours or overnight.

      Reheating Lasagna:
      1. Preheat your oven to 350°F (175°C).
      2. Remove the frozen lasagna from the freezer and unwrap it.
      3. Place the lasagna portion(s) in an oven-safe dish.
      4. Cover the dish with aluminum foil to prevent the lasagna from drying out while reheating.
      5. Place the dish in the preheated oven and bake for about 45 minutes to 1 hour, or until the lasagna is fully heated throughout.
      6. Afterward, remove the foil and continue baking for an additional 10-15 minutes to allow the top to become golden and crispy.
      7. Once reheated, remove from the oven and let it sit for a few minutes before serving.

    This is my first time making a lasagna so this is probably an obvious answer.. but you say to layer 3 noodles followed by cheese, sauce, cheese and then repeat 2 more time. 3 layers of noodles would only be 9 noodles and the recipe calls for 12. Where do the last 3 noodles go?
